Cajun Café finds a New Home

Restaurateurs Gary and Mary Gilbertson opened the Cajun Café in 2002 in downtown Fargo. After many years in the business, Gary and Mary came across the idea for the Cajun Café and found it to be one of the most fun, different, and exciting food and atmosphere they had been around.
After running the business successfully for two years, the couple decided it was time for some changes. They wanted to add beer and wine to the menu. Problem! Their lease did not allow them to this. Solution! They went real estate shopping and found themselves a newer building with a great kitchen that had space for a small bar.
After they found a home, it was then time to pursue financing. It was then they called upon the services of SBDC Regional Director Aimee Schwartzwalter. Aimee guided the clients through the financing process and explained all the possibilities. One program that Aimee highlighted was the SBA 504 participation loan program through DCDC. Aimee explained how the 504 offered a 20 year term with a low fixed-interest rate. Aimee proceeded to develop financial projections and helped the clients package the loan.
Since receiving the loan, the clients have hired an additional six employees and have the distinct advantage of owning the building they do business in. The addition of beer and wine has also boosted sales and profits. When asked about their experience of working with the SBDC, Gary and Mary replied, "Aimee's knowledge and preparation helped us to be ready for everything. The banks and customers have been nothing but impressed with our organized set up. Aimee's knowledge was golden and without her we could not have done this. Thank you!"
Cajun Cafe's new location is at 1324 25th Ave S just west of University Avenue in Fargo, ND.
